The story
Le Genty Magre is a warm, friendly, and gastronomic place in the heart of Toulouse. Chef-owner Romain Brard has been at the helm for over twenty years, forging a restaurant that values work well done and banishes routine. His career took him through top kitchens in New York and Tokyo before he settled in this city.
The kitchen focuses on traditional French bourgeois cuisine—balanced, rich, and generous. No fussy tweezers here. The menu changes with the seasons, always favoring fresh produce and rigorously selected suppliers. You might find truffles at the start of the year, asparagus and quail in spring, seafood in summer, and game or root vegetables in autumn.
Prawns in kadaïf, stuffed spider crab, pan-seared foie gras, and poached fig are examples of the culinary creations. The signature Le Cassoulet du Genty Magre is available on the Tradition Menu (€49) every lunch and dinner. Lunch formulas offer two courses for €26 or three for €29.50 (excluding Saturdays and public holidays). In the evening, the Seasonal Menu is €58.
