The story
Just outside the city, in a charming brick building with rose-hued walls, L'Aparté offers a pause from the everyday. The restaurant, recognized with a Michelin star, is set in a calm, green environment where a century-old lime tree shades a wooden terrace. Inside, the dining room blends contemporary design with the warmth of the region: dark parquet floors, crisp white tablecloths, and large windows that flood the space with natural light. It is a setting that feels both intimate and generous.
Chef Jérémy Morin leads the kitchen with a clear philosophy: cuisine that is both gourmet and refined, always in step with the season. Trained at Le Meurice and Le Bristol in Paris, he brings a rigorous technique to the table, but his cooking is personal and deeply connected to the terroir of the South-West. Alongside his executive chef Anthony Chevallier—a finalist for the prestigious Meilleur Ouvrier de France—the team crafts dishes that are as precise as they are expressive.
The menu changes every two months, following the rhythm of the market and the garden. Traditional dishes are reimagined with contemporary flair—bold pairings, modern presentations, and a clear respect for the product. Foie gras, line-caught fish, meats from local producers, and vegetables at their peak all appear with a lightness that never masks their origin. The tasting menu, with a wine pairing designed by the sommelier, is the fullest expression of this modern cuisine. L'Aparté also offers a lunch menu and a Carte Blanche, letting the chef guide the experience.
The dining room, decorated by Laurence Gil, feels both elegant and lived-in. A private salon seats up to fifteen guests, and the entire restaurant can be privatized for larger celebrations. The terrace, protected by a bioclimatic pergola, extends the experience outdoors in warmer months. Every detail—from the service to the plate—reflects a house that values authenticity over spectacle, and a simple, precise pleasure in sharing a meal.
