Behind the ancient pink-brick facades of Toulouse, Le Cénacle is a discreet dining room within La Cour des Consuls Hôtel & Spa. The space, with its stone fireplace and a reproduction of Caravaggio’s Supper at Emmaus, sets the stage for a meal that is both traditional and modern. The Michelin-recommended restaurant is the promise of an unforgettable culinary experience, where the team crafts audacious modern cuisine.
Since spring 2025, Chef Maxime Canal has led the kitchen. He first arrived at La Cour des Consuls in 2019 as a commis, rising to sous-chef before his promotion. His cooking is built on a subtle balance of authenticity, creativity, and seasonality. By prioritising short supply chains and fresh ingredients, he affirms a responsible cuisine rooted in local know-how and strong ties to regional growers.
The chef’s approach is described as a visual and olfactory journey, a balance between traditional and Mediterranean flavours. The eye is invited to guess the flavours before the palate confirms them.
Le Cénacle offers several tasting menus. The “Menu du Marché” (39€) is served at lunch only, changing daily with the chef’s inspiration. The “Menu Prodige” (69€) is a four-course option available at lunch and dinner, featuring dishes like asparagus with caviar flower and egg, or pithivier of maigre with peas and vin jaune. The “Menu Ambassadeur” (119€), served only in the evening, is an eight-course experience that includes a signature dish of veal sweetbreads with onion tatin and tarragon. A cheese trolley is also available.
The wine list is carefully selected to complement the food, with pairings offered for each menu. The restaurant is open for lunch and dinner from Tuesday to Friday, and for dinner on Saturday.
