In the historic Saint-Sernin district, a few steps from the Capitole, L’Écorce brings a new kind of precision to Toulouse’s dining scene. Chef Bertrand Millar, a Maître Cuisinier de France, trained in some of the country’s most exacting kitchens – Maison Pic, La Côte Saint-Jacques, L’Espérance – before opening his own restaurant in 2025. Seven months later, the Guide Michelin awarded him a star, a recognition that speaks to the clarity and ambition of his work.

Millar’s modern cuisine is described as “technique et esthétique graphique” – technical and graphic, yet stripped back. Each plate is built around carefully sourced ingredients from short supply chains, favouring small producers and artisans. The result is cooking that feels both inventive and grounded: a “Tarte contemporaine aux légumes et algues”, “Pigeon, Poivron, Pastèque et Courgette”, or a “Fraîcheur de Tomate, Olive noire et Piment d'Espelette” that captures the South-West in a single bite.

The restaurant offers four menus: the lunch-only “Saveurs du marché” (39€), “Initiation” (67€), “Gourmet” (79€), and “Dégustation” (91€). Each unfolds in clear acts – mise en bouche, starter, fish, meat, cheese, dessert, mignardise – with the chef’s signature “Instant végétal” often appearing as a standalone vegetable course.

L’Écorce itself is intimate, a space where the dining room and the kitchen work in quiet alignment. There is no unnecessary flourish here; the focus stays on the plate.
