The story
Justine and Jean-Baptiste, both from families where the table was central, met in the kitchens of great French houses. Jean-Baptiste worked alongside Meilleurs Ouvriers de France Guy Lassausaie and Jean-Luc Rocha, as well as Thierry Marx. Those years taught him precision, but he never lost sight of his roots. Together, the couple opened L'Équilibre in Balma, just minutes from central Toulouse, to share their vision of things simple and authentic.
The kitchen follows the rhythm of the market. Local products are the foundation. Jean-Baptiste’s philosophy: “Apart from choosing the product and respecting it, what matters in cooking is that there are no rules—only the result counts.” Classic preparations meet bold ones, raw meets cooked, earth meets sea, butter melts into olive oil. The result? Plates that are “reassuring and mischievous,” delivering both pleasure and surprise. This modern cuisine earned the restaurant a Michelin Bib Gourmand in 2026, a recognition of good quality, good value cooking.
The dining room mirrors the kitchen’s ethos. Concrete, iron, wood, and light come together in warm equilibrium. Every element was chosen with care, in collaboration with skilled artisans and a talented architect. It is a space that feels convivial and unpretentious, a setting for the unfussy, market-driven menus served at lunch and dinner.
Lunch offers a market menu in three, four, or six services (from 32 to 49 euros), with wine pairings available. In the evening, a discovery menu (three or four services) and a tasting menu (six services) let guests explore the chef’s range. No children’s menu is listed, but the team adapts to younger tastes.
