The restaurant sits in Montrabé, just outside Toulouse, in a building with a terrace, a pergola, and a garden. The setting is deliberately warm and welcoming, a place where the food and the surroundings feel connected. Whether you dine inside or out, the atmosphere is calm and unhurried.
The menu changes with the seasons, but the style is clear: clean, layered, and ingredient-driven. At lunch, a set formula offers a choice of two starters, a fish or meat main, and a dessert or cheese. In the evening, the à la carte and the "L'instant Découverte" menu (57€ or 69€ for fish and meat) show the full range. Starters might include gravlax of trout with absinthe and pink berries, panna cotta with fennel, or a soft egg with green asparagus and a thyme-citron beurre blanc. Mains feature roasted John Dory with nut brown butter and stuffed calamari, or a low-temperature cooked guinea fowl with artichokes and a foie gras jus. Desserts are equally precise – a 64% chocolate in five textures with rum-raisin ice cream, or a strawberry-pistachio number with kataifi pastry.
