The story
Ten minutes from the centre of Toulouse, down a country lane, stands a restored farmhouse from the 1880s. This is Mas de Dardagna, a place that feels far from the city. The building has been faithfully restored, its brick and Garonne pebble walls keeping the character of the original ferme.
Valérie greets guests at the door. In winter, the dining room is warm with brick and stone. In summer, the terrace opens onto a sunny garden. In the kitchen, Chef Fabrice Joffre prepares a varied cuisine built on the cult of quality produce. The menu changes constantly with the seasons, driven by the best ingredients he can find.
For lunch and dinner, the "Menu Petit Plaisir" is a five- or six-course affair. It might begin with a beetroot hummus and crispy chickpeas, then move to braised veal breast or a gambas risotto with asparagus. Mains could be a pan-fried fish of the day or a stuffed chicken leg from the Boubal farm in Aveyron. Cheeses come from affineur Stéphane Montamat. Desserts include a matcha roulade or a Lavaur strawberry preparation.
A special Mother's Day menu is also offered, with options like a Gascon black pork and asparagus chartreuse or Pyrenees trout gravlax.
Mas de Dardagna has earned a place in the Michelin guide, a recognition that matches the care taken in both the cooking and the setting. It is a restaurant that respects its roots while looking after every detail.
