The story
Reflets anchors a collaborative project in Toulouse that reimagines the bistro format through fresh partnerships. David Torelli and Mickaël Sauvage partnered with sommelier Xavier Baelde and chef Gaëtan Helleboid, formerly of Vivant, to build the kitchen's direction. This lineup drives a modern bistro philosophy where high-quality produce remains the focal point. The recognition from Le Fooding validates this shared vision for the left bank of the Garonne.
The kitchen balances refined techniques with accessible flavors across its tasting menus and à la carte options. Guests encounter a quasi of veau du Béarn roasted in an herb crust with pistachio and a rich XO chorizo sauce. Another highlight involves ris de veau croustillant served with butter-noisette mashed potatoes and sweet peas. Vegetable-forward choices appear too, such as a raviole ouverte filled with eggplant and zucchini in a tomato cream base. This bistro-style execution prioritizes texture and seasonal sourcing over heavy sauces.
The dining area stretches across a vast room lined with red brick walls and finished with terracotta tiles. A compact terrace extends toward the Viguerie port, offering views of the water during evening service. Natural light floods the room during lunch service, operating from noon to three on select weekdays and weekends. The layout encourages a straightforward flow between the interior and the port-side terrace.
Dessert plates draw on Basque traditions and classic French patisserie. The cheesecake basque arrives with gianduja sauce and toasted hazelnuts, providing a dense contrast to the biscuit base. A chou craquelin offers a crunchy shell filled with Madagascar vanilla cream and Piémont hazelnut praline. Fruit-based options include a panna cotta paired with gariguette strawberries and elderflower syrup.
