The story
At Les Jardins de l'Opéra, Chef Stéphane Tournié runs a kitchen guided by a simple principle: “se faire plaisir pour votre plaisir” – enjoy yourself for the pleasure of your guests. This philosophy translates into a modern cuisine that is frank, honest, and centred on taste. The chef, who trained at prestigious houses including Lucien Vanel in Toulouse and Christian Constant at the Crillon in Paris, as well as in Chicago and Singapore, returned to his roots in Toulouse in 2006.
The setting is a beautiful interior courtyard capped with a glass roof, just steps from Place du Capitole. The atmosphere is described as simple and elegant, welcoming guests for a moment of culinary pleasure. The restaurant holds a Michelin star, a recognition the chef says changes nothing about his meticulous approach to quality, service, and pricing. As the guide notes, “Stéphane Tournié goes straight to the essential and does it well: beautiful products (organic preferably), mastered cooking, finesse and taste.”
The kitchen is known for daring combinations, such as langoustine tails paired with black Bigorre pork blood sausage. The menu changes with the seasons, shifting fish and starters for freshness as spring approaches. Alongside the food, Chef Tournié’s other passion is wine, and the restaurant offers a carefully curated selection of bottles from Occitanie and other French regions. For a more casual experience, the Côté Comptoir serves the same spirit of sharing, open for lunch and dinner.
