The story

TurboMachine in Toulouse: A High-Octane Brunch Spot

The Chef and the Kitchen

TurboMachine in Toulouse serves up a vibrant take on soul food that blends Guyanese and Greek heritage with Levantine spices. Chef Elis Paul-Julian brings her background from Minifundi to this long, narrow space just steps from Place Saint-Pierre. Her approach to soul-inspired cooking rejects restraint, favoring bold flavor combinations that keep pace with the fast-paced neighborhood. This distinctive direction recently earned the venue a spot on the Le Fooding guide for 2026.

Plates Built for Morning Energy

The morning service starts at ten thirty with unapologetically hearty options designed to fuel the day. Spicy pancakes arrive topped with two fried eggs, crisp maple bacon, chili oil, and a crunchy peanut sesame crumble. Guests often pair these with Turkish eggs featuring cream cheese, braised spring onions, and infused oil alongside homemade pita bread for scooping. The dessert menu continues the momentum with thick chocolate ganache over French toast and cassava flour tahini halva.

Colors and Community Spaces

Former Big Mamma design lead Charlotte Palm transformed the interior with punchy screen prints and deliberate pops of color. The layout encourages casual lingering while maintaining a high energy suited to quick coffee runs or longer weekend stays. Families frequently choose the outdoor tables during warmer months, making the street corner a reliable neighborhood gathering point. Evening shifts bring a different rhythm as Thursday crowds gather for shared plates and after work drinks.

At the helm of the turbo-charged TurboMachine, a long, narrow coffee shop just steps from Place Saint-Pierre, Guyanese-Greek Elis Paul-Julian (ex-chef at Minifundi) fuses her roots with a love of anglophile eats and Levantine flavors, spinning out soul-food plates that seriously bring the groove. Her co-pilot, Charlotte Palm (former head of design at Big Mamma), has dressed the walls in punchy screen prints – pops of color framing high-octane dishes built to kick start your day from 10:30am sharp. That morning? Unapologetically handsome spicy pancakes crowned with two fried eggs, crisp maple bacon, chili oil and a peanut-sesame crumble; Turkish eggs with cream cheese, braised spring onions, infused oil and homemade pita bread for scooping every last swipe. And because restraint is overrated: thick chocolate ganache slathered on French toast, ice cream cookie sandwiches, cassava-flour tahini halva or cinnamon babka rolls. These natural mood enhancers will have your blood sugar soaring from the very first bite! Bonus round: Thursday evenings mean after-work drinks and fusion sharing plates with serious swagger. · Marie Delcampo
