The story
On the historic Route Nationale 6 in Tournus, Burgundy, Stéphanie and Yohann Chapuis have transformed the legacy of the Maison Greuze into a contemporary jewel. L'Écrin de Yohann Chapuis is a Michelin-starred address where the couple's passion for honest, precise modern cuisine meets a welcoming, chic atmosphere. The award, a Michelin star, speaks to the high-quality cooking and emotional depth of the food served within these walls.
The restaurant seats just 28 guests in an elegant, cocoon-like space. The décor mixes noble materials, textured walls, and a skylight that bathes the room in natural light, creating an atmosphere that is both refined and genuinely warm. It is a setting designed for the sincere, delicate cuisine that Yohann Chapuis orchestrates.
Yohann Chapuis is not alone in the kitchen. He is backed by a seasoned team, including Julien Burdin, his long-time collaborator and head chef of L'Écrin, who has been by his side since the original Michelin star was awarded. The brigade also includes Jocelyn Magnin, a fixture for over a decade, and Pierre-Emilien Galland, along with promising new talents. In the dining room, a team of attentive hosts and sommelier Etienne Durivault, with over 30 years at the Maison, guide guests through an impressive wine list of 800 references.
The philosophy here is described as "cuisine de goûts et d'émotions"—a cooking of tastes and feelings. While the menu is a celebration of Burgundy's finest products, the approach is firmly contemporary. The restaurant uses local suppliers and artisans, from the earth and vine to the sea. The dining experience itself is a total work of art, with the tableware—designed in collaboration with a porcelain-maker—acting as a natural extension of the chef's elegant plates. The result is a dining experience that feels both luxurious and deeply personal.
