The restaurant has been completely renovated from kitchen to bar, with new openings and light that showcase the work of local artisans. The result is a space that feels both contemporary and rooted in its historic surroundings.

Chef Julien Bousseau’s cooking is a direct reflection of his upbringing. “The animal, the cultivated products have always been respected and worked with care and simplicity chez les Bousseau,” the restaurant explains. His seasonal modern cuisine draws on the tastes and scents of his childhood, with an ardoise—the blackboard menu—that changes every month. Around a single vegetable, fish, or meat, Bousseau composes an entrée and a main course, letting the ingredient speak.

The restaurant’s commitment to this honest, ingredient-driven approach has earned it a Michelin Recommendation, a fitting nod to a kitchen that lets the produce of the region take center stage. The emphasis is on seasonality and discovery, with a wine list that the restaurant takes pride in.

Clovis also offers a boutique with gift boxes and certificates, a way to share the restaurant’s universe. Open Thursday through Monday for lunch and dinner, it closes Tuesdays, Wednesdays, and Saturday lunchtimes. After a winter break, the restaurant reopens in early March.
