Just outside Troyes, in the village of Sainte-Maure, Auberge de Sainte-Maure sits in a green setting beside a river. Modern cuisine built on seasonal produce

Two main tasting menus are available from Wednesday to Sunday. Le Melda, a five-step menu, is priced at 65€, with a wine pairing at 35€. La Seine, a seven-step experience, costs 85€, with a matching drinks pairing at 45€. For lunch, excluding Saturdays, Sundays and public holidays, there is Le Petit Melda, a three-step menu at 39€.

The dishes on the current menu reveal the kitchen’s range. Among the starters, a fried tuna maki with nori and wakame, soy ketchup and lemon gel sits alongside an interpretation of œuf de Mme Guyot with coppa, celery and onion. Main courses include skate with leek and Granny Smith apple, and duck cutlets from Maison Soulard, paired with navets and orange in several textures. Desserts such as a citron meringue with ginger shortbread and yuzu gel, and a pistachio millefeuille with kumquat, show a confident hand with both technique and flavour.
