On Place Jean-Jaurès, in the heart of Troyes’ historic bouchon district, Aux Crieurs de Vin is a bistro, wine bar, and natural wine shop all in one. The name recalls the town criers who once announced the price and quality of bottles at public auctions. Here, Jean-Michel, Nicolas, and the team carry that tradition forward, championing the natural wines of the Aube region.

The menu changes daily, built around fresh, seasonal ingredients sourced from small organic producers. Dishes are written on the board, and the kitchen works with what is best at the market. The atmosphere is relaxed and convivial, whether you sit inside in the bistro ambience or outside on the terrace overlooking the square.

The wine list is the heart of the place. With more than 500 references, the selection focuses on natural, organic, and biodynamic wines, alongside artisanal spirits and beers. The team’s close relationships with their vignerons mean they can offer bottles you will not find elsewhere. You can buy a bottle from the cave to take away, or enjoy it on the spot with a plate of charcuterie or cheese.

A second location at the Halles de Troyes market offers a different mood: after shopping, stop by the cave for a glass of wine and oysters from Chez Pascal.

500 bottles of wine: that’s the treasure trove to be found at this Ali Baba-esque cavern decked out in wood and run by Jean-Michel Wilmes and Frank Windel. Inside their wine bar with plenty of character (bricks, a glass roof, old adverts, wine barrels), they do so much more than just uncork bottles – they also keep an eye on their fine products too: Bordier cheeses, pork and chicken from Benoit and Amélie, andouillette from Thierry, cured pork products from Ospital… The night we went, we opted for: a charcuterie plate that struck us straight in the heart – ham from Ariège, homemade terrine, Gascon black pig andouille, rosette from Conquet; divinely seared free-range veal (tender yet crispy!) with steamed eggplant and a tasty tonnato sauce; and plump plums with speculoos and cream cheese for a late summer dessert. // G.D.
