The story
Just outside Troyes, in the quiet village of Pont-Sainte-Marie, Bistrot DuPont has been a local fixture for more than three decades. Chef Yves Brouillet took over the reins in 2006, and since then his cooking has earned the restaurant a Michelin Bib Gourmand—an award that recognises good quality, good value cooking.
Brouillet’s kitchen is rooted in the products and terroir of Champagne-Ardenne. He describes his style as “généreuse et traditionnelle revisitée”: generous and traditional, but refreshed.
