The story
Caffè Cosi is the expression of three generations of restaurateurs, rooted in the Aube region and shaped by the culinary mastery of Bruno Caironi. After training alongside Alain Ducasse, Roger Vergé, and Gaston Lenôtre, Caironi earned a Michelin star at Le Grill in Monaco before returning to his family’s heartland. In 2016, he opened this trattoria in a former art gallery in Troyes, a space bathed in warm Italian colours where his partner Sandra welcomes guests.
The menu is resolutely Italo-Mediterranean, built on antipasti like mortadella-pistachio, vitello tonnato, and buffalo mozzarella with marinated vegetables. Main courses range from saltimbocca alla romana to linguine alle vongole and a Carnaroli risotto with girolles and truffles. Desserts include a campari sorbet, a baroque tiramisu, and an affogato that “could make you sin.” The wine list, curated by the team, spans Veneto to Sicily – a celebration of Italian viticulture. This Italian cuisine, honest and generous, earned the restaurant a Michelin Recommended distinction.
Two terraces – one on a pedestrian street facing the Saint-Nicolas church, another in an inner courtyard – complement the cosy, loft-style interior. A dedicated wine bar invites guests to taste by the glass or take bottles home. A fine grocery shop offers Italian staples: olive oil, dried tomatoes, Panforte, and limoncello. Takeaway is also available, making the trattoria’s excellence accessible beyond the table.
