After honing his skills in the kitchens of the three-Michelin-starred restaurant at Castellet alongside Christophe Bacquié and Fabien Ferré, and at La Maison d’Uzès, he returned to his roots. In the charming village of Saint-Siffret, just minutes from Uzès, he opened Le Pt'it Mercier – a nickname from his childhood that pays homage to his family's local legacy.
