The story
After seven years of operation, Volver. has closed its doors in Serviers-et-Labaume, near Uzès. The announcement, posted by the chef and team, marks the end of a restaurant that earned a Michelin Recommended distinction from 2021 onward. "Un nouveau chapitre commence," the chef writes, explaining that it is time to pass the torch and turn toward a new project.
Volver. was created with a simple ambition: a place where the food is excellent, the service impeccable, and every detail is designed for a genuine experience. The chef credits Shumi, who ran the dining room, for giving the restaurant its soul. Together they built a strong, sincere identity that was recognized by the Michelin guide year after year. "We always kept the same course: that of rigor and work well done," the chef reflects.
The cuisine was modern, driven by market produce and local influences. Sunday lunches featured large sharing platters—côte de bœuf or bouillabaisse—described as "monuments français ressuscités" (French classics revived). A special truffle menu showcased ultra-local Melanosporum truffles, used without any added aromas, in dishes like artichoke cream with black truffle, scallops with truffle, and Saint-Pierre with celery risotto.
The chef thanks all guests, regulars and passers-by, as well as partners and Shumi. "We have lived very beautiful moments at your side, and they will remain precious." The adventure continues, he says—he is not leaving the trade nor his love for cooking. A new location or project is hinted at: "À très bientôt, ailleurs!" (See you soon, elsewhere!).
For now, the restaurant that served modern cuisine in the Uzès countryside has closed. But the story of Volver. is not over—it is simply turning a page.
