The story
At the foot of the medieval Château de Crussol, overlooking the Rhône valley and the vineyards of Saint-Péray and Cornas, Auberge de Crussol is a place where time slows down. The setting is both dramatic and intimate: shaded by linden trees in summer, warmed by the fireplace in winter. The restaurant describes itself as “a true good country table” – and the Michelin guide has taken notice, awarding it a Recommendation for its honest, generous cooking.
The kitchen is built around a wood-fired grill – the heart of the restaurant. Beef from the Ardèche plateaus, Fin Gras du Mézenc when available, pork from neighbouring farms, and seasonal vegetables are all treated with respect for the product and its origins. The cooking is straightforward but precise: grillades, slow-cooked cocottes, and dishes that let the ingredients speak. This is a cuisine “terroiriste” – made in-house, sourced from ultra-short supply chains, and refreshed with the seasons. A carefully chosen list of around one hundred regional wines completes the experience.
The restaurant’s family-friendly spirit runs through everything. The dining room and terrace are designed for sharing, whether you come for a midday meal or a long evening dinner.
