In Valence, the Maison Pic is home to a restaurant that has held three Michelin stars since 2007. Chef Anne-Sophie Pic earned them by continuing a family tradition begun by her grandfather André and father Jacques – both three-star chefs before her. Today, she is the most Michelin-starred female chef in the world, and her flagship Restaurant Pic in Valence remains the heart of her culinary universe.
Pic’s cooking is guided by a philosophy she calls “Suffusion” (Imprégnation). The process begins with an aromatic framework: she identifies the essence of a product, then builds a dialogue of flavours around it. Her iconic dishes – Berlingots ASP, Millefeuille blanc, blue lobster – come from this methodical yet intuitive approach. “The leaves, roots, and flowers offer an incredible aromatic palette,” she says, “and my work is to sublimate their aromas.”
Pic sources locally from the Drôme, France’s first organic region. She maintains long relationships with producers: a nurseryman grows rare herbs, an almond farmer supplies sweet local almonds, a wild gatherer brings spruce buds and elderflowers. At the Maison Pic, a 400 m² aromatic garden supplies fresh flowers and herbs – tansy, sage, marigold – that become the backbone of her aromatic patterns.
The restaurant itself, described as the beating heart of Maison Pic, offers a setting of understated elegance. Executive Sommelier Paz Levinson curates a cellar of 2,600 references and 32,000 bottles, with a particular focus on Rhône Valley wines. Pic is also a pioneer in non-alcoholic pairings, using teas, kombuchas, and infusions to mirror the complexity of the dishes. In 2024, Tripadvisor named Restaurant Pic the Best Restaurant in the World for fine dining – a testament to the quiet power of a kitchen driven by nature, precision, and emotion.
