The story
A short drive from Valenciennes and Maubeuge, in the village of Bry, Le Camélia sits beside the Château de Bry. The dining room is bathed in natural light, opening onto a setting that feels both calm and generous. Here, the team offers more than a meal – it is a complete gastronomic experience, where the precision of Chef Guillaume Stile’s cooking meets attentive, warm service.
Chef Stile’s menu is anchored in modern French cuisine, built on clear technique and seasonal ingredients. The current carte shows his range: a veal sweetbread in three preparations, served with cabbage, Ibérico chorizo, feta, and a jus corsé (€28). A turbot wrapped in a bread crust, with young shoots, basil, and a beurre blanc with sea urchin coral (€27). For mains, beef aged ten days on the carcass, paired with peas, truffled potato purée, and a rich jus (€37), or blue lobster grilled over a Japanese barbecue, with spring vegetables, lobster risotto, and a shell cream (€48).
Desserts stay true to the same composed style: a lime cheesecake with strawberries from Roisin (€12), and a Sioka chocolate soufflé with vanilla ice cream (€12). A cheese trolley (€11) rounds out the meal.
The restaurant’s quality has been recognised by the Michelin guide with a Recommended mention for 2026, alongside other distinctions from the Boullenger guide, the Collège Culinaire de France, and the Maîtres Restaurateurs label. But the real impression comes from the space itself – the light, the view of the château, the unhurried pace. It is modern French cuisine at its most grounded and elegant.
