Agora: A Breton Table with a World View

In the heart of Vannes’ historic quarter, at 19 rue de la Boucherie, Agora brings together Brittany’s finest produce and a chef’s journey through France’s most celebrated kitchens. Guillaume Le Bozec, who opened the restaurant with his partner Delphine in June 2022, describes his cooking as “un subtil mélange de traditions bretonnes et d’inspirations venues d’ailleurs” – a subtle blend where the authentic flavours of the Breton terroir meet ideas from far afield. The restaurant earned a Michelin Recommended distinction in 2026, a fitting nod to the precision and creativity in every plate.

A Chef Forged in Three-Star Kitchens

Le Bozec’s career began at Le Pressoir in Saint-Avé with chef Bernard Rambaud (1 Michelin star), then at Manoir de la Boulaie near Nantes, where he worked under Laurent Saudeau (2 Michelin stars). There he rose from apprentice to sous-chef, building the rigour that marks his cooking today. A pivotal stage at the legendary Troisgros (3 Michelin stars) cemented his commitment to gastronomy of the highest order. These experiences form the backbone of his modern cuisine, rooted in Breton tradition but never confined by it.

In the dining room, Delphine brings her own expertise: a background in cooking, a BTS in dietetics, a biology degree, and WSET certifications in sommelierie. Together with maître d'hôtel Benjamin, she curates the wine pairings and oversees service, creating a seamless experience from kitchen to table.

The Menu: Seasonal, Local, Inventive

Agora’s carte changes with the market, built on fresh, locally sourced ingredients. A recent winter menu opened with an organic egg from Arradon, served with Parmesan and celery brunoise. The main course offered a choice of yellow poultry or pesked au fil de l’eau (fish), accompanied by winter vegetables. A trio of aged cheeses from Vannes’ fromagerie “Fromages de nos terroirs” preceded a dessert of chou pastry with pistachio cream and cocoa sorbet. The business lunch – “Menu Affaire” – is served exclusively at lunch (except holidays) and ranges from €27 for two courses to €38 for the full menu including cheese, offering a refined but accessible taste of Le Bozec’s modern cuisine.

Atmosphere and Philosophy

The restaurant’s slogan, “Saveurs bretonnes, au gré des voyages,” signals its spirit: a deep respect for Brittany’s pantry – seafood, dairy, vegetables – combined with a traveller’s curiosity. The dining rooms are air-conditioned and equipped with Wi-Fi, comfortable without pretension. It is a place born “après la période tumultueuse de la pandémie,” as the team puts it – a return to the essential, to sharing simple, authentic moments around a table that tells the story of a chef, a region, and a journey.
