The story
On place Valencia, in the historic centre of Vannes, Empreinte is the kind of restaurant that feels like a natural extension of its neighbourhood. It’s the project of Baptiste and Marine, a couple whose complementary talents shape every detail. Baptiste is in the kitchen, crafting what he calls “la cuisine du vivant”—living cuisine rooted in biodynamic principles, short supply chains, and a deep respect for the product. Marine runs the front of house, bringing warmth and a natural generosity to the dining room, and curates the wine list.
The restaurant’s tagline, “cuisine minutieusement animée,” captures the spirit: dishes are carefully, thoughtfully made, yet never stiff. The atmosphere is simple, enveloping, and full of life. Here, the food is built around what’s best from the land and sea, sourced from local producers and foraged greens. A weekly lunch menu changes every Tuesday, offering a well-priced three-course formula (€36). Recent examples include a salad of first tomatoes from Betty’s farm, grilled apricots from Baden, and a caponata of roasted aubergines with buckwheat semolina. Main courses might feature coastal fish with Espelette pepper soup or roast beef from Trévéro farm, served with melting potatoes and wild greens.
On Friday and Saturday evenings, the “Suivez l’Empreinte” tasting menu (€55–€65) takes a more ambitious arc, moving through fish, cheese, and meat. The cooking is precise, balanced, and always in tune with the seasons. This commitment to responsible, flavour-driven cooking has earned Empreinte a Michelin Recommended distinction—a recognition that feels earned by the daily, unhurried work of a couple who simply want their guests to feel at home.
