The story
At the heart of Vannes, restaurant Iodé offers an experience built on a singular idea: to make guests feel the ocean before they taste it. Helmed by the duo of chefs Sophie Reigner and Julien Noray, the kitchen crafts a cuisine that is both free and deeply rooted in the identity of Brittany.
The guiding principle is "boire la mer" — to drink the sea. Every course, from amuse-bouche to mignardise, traces a subtle, iodine-infused thread. Chefs Reigner and Noray work with algae in all its forms—fresh, dried, candied, infused—alongside sea water and coastal plants. The result is a menu of contrasts and emotions, where salinity, umami, and vegetal freshness echo the scent of the shore. This approach earned Iodé a place among Michelin's recommended tables, a recognition of their singular, sensory-driven vision.
Both chefs are self-taught. Sophie Reigner, who has competed in numerous culinary contests, builds her cooking around the best local ingredients from Breton producers, fishermen, and foragers. Julien Noray, an engineer in food physico-chemistry and a finalist on the first season of Objectif Top Chef, brings a precise, inventive touch to pastry, winning Bronze Dessert at the French Dessert Championship in 2017. Together, they create a continuous narrative where sweet and savory both honor the ocean.
The restaurant itself is an elegant, immersive space in central Vannes. With soft tones, marine-inspired materials, and dimmed lighting, the atmosphere is calming and refined. The dining room is designed to slow time, letting guests focus on the journey of each plate. Bespoke tableware and precise, aesthetic plating prepare the senses for what is to come.
Iodé offers two ways to experience this cuisine. The gastronomic menu is a full immersion, evolving with the seasons. Midweek, a bistronomic lunch provides a quicker, more accessible version of the same philosophy.
