The story
In the historic Saint-Patern district of Vannes, La Tête en l'air has earned a Michelin star for its boldly inventive approach. Chef Clément Raby and his partner, front-of-house director Estelle Mercier, craft what they call a cuisine libre – a free, unconstrained style that thrives on surprise. There is no à la carte; instead, guests choose from blind tasting menus of 4, 6, or 9 courses, the contents of which are revealed only after the meal. This act of trust invites diners to let go of expectations and experience the chef’s unfiltered creativity.
Raby’s path to the stove was anything but conventional. After studying international commerce in Paris, he switched to a fast-track culinary diploma and cut his teeth in a traditional auberge in the 17th arrondissement. A subsequent role in Savoie led him to run his own restaurant, where he met Estelle. Together, they decided to build their own universe in Vannes, a city near the sea that suited their shared vision. The result is a restaurant that feels deeply personal, from the seasonal menu to the custom-made banquettes.
The restaurant recently underwent major renovations and reopened in May 2026 with a new feature: the Table en Immersion, a comfortable counter facing the open kitchen. Here, guests can watch the brigade at work while enjoying the same surprise menus. The cuisine is driven by micro-seasonality and a focus on maritime and vegetable ingredients, with unexpected pairings that draw on both local terroir and distant influences. Dishes evolve daily based on what the producers and weather deliver.
