Ryoko means “voyage” in Japanese, and that is exactly what this compact ramen counter in Vannes’ Saint-Patern district offers. Conceived by the team behind the restaurant La Tête en l’air, Ryoko is a free interpretation of Japan’s iconic street-food bowl. The chef builds his own umami by pairing classic Japanese techniques with Breton products sourced through short supply chains.

The ramen here is built in five deliberate steps: a long-simmered broth (meat or vegetable, cooked for hours), a tare base that concentrates umami, fresh artisan wheat noodles cooked to order, an aromatic oil (shallot, black garlic, or shrimp) for depth, and finally toppings such as AOC meats, line-caught fish, fresh vegetables, and condiments. Each bowl is a balancing act of five essential flavours.

The Michelin guide awarded Ryoko a Bib Gourmand in 2026, recognising the kitchen’s ability to deliver high-quality cooking at a reasonable price. The setting is informal and intimate – counter dining only, with no reservations accepted. Guests can also order takeaway.

Ryoko is open for lunch and dinner Tuesday through Saturday. It is a place where Japanese ramen meets the best of Brittany, one bowl at a time.
