The story
Since 2020, La Cassolette has occupied a handsome spot on place Georges-Clemenceau, in the old city of Vence. The restaurant’s name recalls the small earthenware pot used for slow cooking – a hint at the gentle, considered approach to Modern Cuisine practiced here.
The kitchen works with whatever is freshest, changing the menu daily according to arrival and season. This is simple, Mediterranean-inspired cooking that lets the ingredients speak. Starters such as a homemade foie gras terrine with pineapple and red onion chutney appear alongside a ceviche with avocado and citrus, or a gazpacho with tomatoes, cucumber and peppers, finished with feta and Italian cured ham.
Mains range from a lobster risotto in homemade shellfish bisque to a Simmenthal beef fillet cooked on the plancha with panisse and sautéed mushrooms. Sea bream comes with a cumin-scented ratatouille; a summer truffle risotto appears when the season permits. The desserts stay equally direct: dark chocolate fondant with pistachio ice cream, coconut panna cotta with exotic fruit coulis, or a nougat glacé with red berry coulis.
La Cassolette’s real draw is its terrace, set in the pedestrian centre of Vence, just steps from the cathedral and the old Peyra fountain. In fine weather, lunch and dinner are served outdoors – a calm, convivial spot that has earned the restaurant a Michelin Recommended distinction. It is a place built on honest cooking and a sense of place, where the warmth of the welcome matches the quality on the plate.
