Chante Bise is a family creation that opened in 1998, situated in the heart of the Limagne region between Clermont-Ferrand and Thiers. The restaurant is located at Lieu-dit Courcourt in Seychalles, a quiet spot in the Auvergne countryside that feels a world away from the city. Main courses feature a faux filet with roasted rattes potatoes and blue cheese sauce, and canette (duckling) in two preparations: roasted fillet with honey sauce, and braised legs in a samosa with ratatouille.
