At 3 boulevard de Russie, in the heart of Vichy, L'Hippocampe has earned a Michelin recommendation for its focused, ingredient-driven approach to seafood. The restaurant’s name—the seahorse—hints at the marine inspiration that runs through every course.
The kitchen works with a short, seasonal menu that changes regularly. Lunch offers the “Retour de pêche” formula at €28, which includes a mise en bouche, the fish of the day, cheese, and a dessert of your choice, plus a quarter-pitcher of wine. This is served every midday except Sunday and public holidays. For a deeper dive, the “Armor et Arverne” menu at €54 pairs roasted langoustine tails with a tomato vierge and pickles, or foie gras from the Limagne plains with lemon bread, strawberry, and basil. Main courses might include a snacked turbot fillet with wild garlic emulsion and mustard-mashed potatoes from Charroux.
For those who prefer a land-based option, the “Avel Vor” menu (39€) offers a “Mijotée de bœuf” with a farandole of vegetables. A vegetarian menu is also available at €38, featuring first-of-season French asparagus with citrus, rocket, and pine nuts, followed by a poached organic egg with vegetable mousseline.
From early June, L'Hippocampe presents “Le Homard dans tous ses états” — a four-course journey built around a 750g blue lobster per person, priced at €160 for two (including a half-bottle of Saint-Véran). The first half of the lobster appears three ways: the knuckles in an émiettée on a bisque panna cotta, the medallions on a tonka bean sablé tartlet with beetroot, and the claws in ravioli with a caramel consommé scented with kari-gosse. The second half is roasted in its shell with a Nantais butter and seasonal roots and mushrooms. You finish with any dessert from the carte.
L'Hippocampe also offers a takeaway service. Orders must be placed by noon the day before on weekdays, and by Thursday for the weekend. The takeaway formulas change weekly: Wednesday through Friday, a three-course menu (mise en bouche, main, dessert) is €15; Saturday and Sunday, a four-course menu is €19. Recent offerings have included fillet of plaice with sorrel and a crème brûlée with Vichy pastille, or roasted pork loin with Charroux mustard and gratin dauphinois.
