A Michelin-Starred Table in the Heart of Vichy

In the spa town of Vichy, a few steps from the Art Nouveau Opera and the banks of the Allier, Maison Decoret occupies a striking brick chalet built in 1857 under Napoleon III. The building, crowned with a contemporary glass roof and a green roof, sets the stage for a restaurant that has held a Michelin star since 2000. Chef Jacques Decoret and his wife Martine, who together run the house, have created a place where the cuisine of Auvergne is both honored and reimagined.

Chef Jacques Decoret: Meilleur Ouvrier de France

Jacques Decoret is a native of the Montagne Bourbonnaise, the same region as his wife Martine. After early experience in Switzerland, the couple returned to France to train in some of the country’s most prestigious kitchens: Maison Troisgros, La Côte Saint Jacques, L’Arpège with Alain Passard, and Régis Marcon. In 1996, Decoret was named Meilleur Ouvrier de France. Two years later, he and Martine opened their first restaurant in Vichy, earning a Michelin star in 2000. In 2008, they moved to the current location, adding a four-star hotel of five intimate rooms—one of the smallest Relais & Châteaux properties.

An Experience of Place and Season

The dining room is light-filled and understated, with views over the Parc des Sources. Martine Decoret oversees a service that is attentive and unhurried, never stiff. The kitchen’s cooking is grounded in the best local products, childhood memories, and technique acquired from the greats. Each plate aims for balance and precision, drawing on the contrasts and landscapes of Auvergne. The restaurant also offers carefully studied pairings of food with both wine and water—a nod to Vichy’s thermal springs—deepening the sense of place.
