The story
L'Inattendu is the expression of chef Emilien Rouable’s desire for freedom. His cooking is guided solely by the produce of the moment: fruits and vegetables grown with care, fish from sustainable sources, and meats from animals raised with respect. Rouable describes his plates as a reflection of his own duality—a balance between a rugged character and a tenderness inherited from the women of his childhood.
