A kitchen with conviction

Thirty minutes from Toulouse, in the quiet countryside of Villemur-sur-Tarn, the Château de la Garrigue houses L’Alto. The dining rooms open onto a park, and the atmosphere is one of calm refinement. The restaurant earned a Michelin Recommended distinction in 2026 – a recognition that matches the ambition of its young chef, Sylvain Delbreil.

Chef Sylvain Delbreil: a late calling, a precise hand

Delbreil did not take the usual route. After a first career as an IT consultant, he left everything to train in the Basque Country, then spent three years as second chef at the Michelin-starred Sept in Toulouse under Guillaume Momboisse. Four years ago he joined L’Alto as sous-chef; now he leads the kitchen. His cooking, he says, is about “the sense of the product, the exact cooking, the precise pairing of flavours, and a touch of instinct.” The result is a Modern Cuisine that respects seasonality and lets each ingredient speak clearly.

A team of experienced hands

Delbreil is supported by a strong brigade. Pastry chef Frédérique Nivault spent over twenty years in three-star kitchens – including Bernard Loiseau’s La Côte d’Or – before bringing her rigour to L’Alto. Sommelier Clément Mercadier, still in his early twenties, curates a cellar that ranges from Burgundy to the Loire, Bordeaux to the Rhône, with a passion that matches the kitchen’s precision. Maître d’hôtel Sonia Bouallegui, who rose from server to head of the dining room, ensures the service is both exacting and warm.

A place for events

The Château de la Garrigue also hosts private dinners, business lunches, and celebrations. The team tailors each event to the season and the guest, keeping the same commitment to creativity and excellence that defines the daily service.

Wine with character

The cellar, overseen by Clément Mercadier, is a carefully built collection of French estates – from Champagne and Alsace to the southern valleys. Each bottle is chosen to complement Delbreil’s Modern Cuisine, adding another layer to the experience at L’Alto.
