Restaurant Mosaic opened its doors at Château des Tesnières in Torcé, near Vitré, on 1 May 2025, marking a significant new chapter for Chef Chantel Dartnall. After fifteen acclaimed years in South Africa, the restaurant has found a second home in the French countryside, where the rhythms of the seasons and the surrounding gardens, woodlands, and terroir deeply resonate with her culinary philosophy.
Chef Chantel Dartnall’s cuisine is botanical at its core. She draws on a profound respect for nature, seasonality, and the beauty of exceptional ingredients. Her dishes are built around delicate herbs, flowers, and botanicals that are never mere garnish—they become essential components that invite guests to connect with the natural world. Inspired by French masters including Michel Bras and Alain Passard, Chantel creates compositions that capture the essence of each ingredient, aiming to evoke wonder, reflection, and delight.
