The story
For several generations, the Ispa family has been welcoming guests to their home in the village of Feldbach, nestled in the Sundgau region of southern Alsace. This is the setting for Cheval Blanc, a restaurant where a deep respect for tradition meets a spirit of creative, local cooking.
Eric and Claire Ispa are the current custodians of this family legacy. Their cuisine is described as generous and meticulous, rooted in classic Alsatian recipes but revisited with a modern touch. The menu changes with the seasons, built around fresh, local products. The result is a refined yet approachable take on French cuisine that has earned the restaurant a place in the Michelin guide.
Wine is central to the Cheval Blanc experience. The restaurant’s cellar holds over 40,000 bottles, with a wine list of more than 4,000 references carefully selected from France and beyond. This dedication was recognized in 2024 when La Revue du vin de France named it “Wine List of the Year.” The team takes the time to suggest pairings that complement each dish with precision and simplicity.
The restaurant seats 110 guests across four distinct dining rooms, plus a covered, heated terrace. Guests can choose their preferred room when booking, from the brasserie to the gallery. The atmosphere is one of understated elegance, designed for unhurried meals. A range of set menus is available, from a daily lunch menu to more elaborate festive offerings, making the restaurant suitable for both a casual lunch and a special celebration.
