In the historic village of Oppenweiler, just outside Backnang, the Einhorn has been a fixture since 1806, when it first opened as a brewery and post station. Today, the restaurant and hotel is run by the Munz and Decker families, who have shaped it into a destination for classic cuisine that is both grounded and refined. The kitchen is led by chefs Alexander Munz and Jan Decker, whose cooking follows the motto: “Neues aus der Welt – Gutes aus der Heimat” (New from the world – Good from home).

This approach has earned Einhorn a Michelin recommendation. The recognition is a natural fit for a kitchen that prizes seasonality and regional sourcing. The chefs focus on market-fresh ingredients, often from local producers, and transform them with precision. The menu changes with the seasons, and the team grows fresh herbs on their own terrace.

Diners can choose from a la carte dishes or a multi-course menu. Starters might include a delicate Zander cured with aromatics, served with radish, beet, and a wild-caught shrimp. For mains, the kitchen offers a classic Swabian onion roast beef with Maultäschle and hand-scraped Spätzle, or a duo of duck – sous-vide breast and crispy leg – with Brussels sprouts and chestnuts. Vegetarians are well cared for, with dishes like potato-ricotta gnocchi with chicory and walnuts. The meal often ends with a dessert from pastry chef Ute Wagner-Munz, such as a milk chocolate-pistachio slice with sea buckthorn ice.

The setting adds to the experience. The restaurant occupies a historic building with a lovely inner courtyard garden, shaded by plane trees and a pergola – ideal for warm-weather dining. Inside, there are private rooms and a wine lounge for tastings. The team also caters events and conferences, drawing on years of experience hosting everything from weddings to business gatherings in spaces for up to 30 guests.
