Family Roots in the Black Forest

The LAMM in Rotensol, a high-altitude hamlet above Bad Herrenalb, has been a place of hospitality since 1790. For the past four decades, the Schwemmle family has shaped its character. Chef Karl Schwemmle, trained as a cook, honed his craft in celebrated kitchens from Stockholm to Paris before returning to the Northern Black Forest with his wife Bärbel. Today, with his daughters, he continues the tradition of a restaurant that feels both timeless and personal.

A Setting of Quiet Grandeur

Perched 550 metres above sea level, the LAMM is surrounded by meadows and forests. The dining rooms and guest rooms look out over the valleys and hills of the Northern Black Forest – a landscape that changes with the seasons. The atmosphere is cosy, rooted in the region: classic Black Forest style with modern touches, antique furnishings, and a warmth that comes from a family-run house.

Country Cooking with Confidence

The kitchen at LAMM is recognised by the Michelin guide with a Bib Gourmand for good quality, good value cooking. The cuisine is country cooking – straightforward, generous, and deeply connected to the land. Guests praise the “very good cuisine, at a fair price”, a reflection of the Schwemmles’ belief that honest food and genuine hospitality should be accessible. The menu changes with the seasons, drawing on the produce of the Black Forest and the surrounding region.

The Vinotheque

A passion for wine runs through the family. Under the hotel, a rustic vaulted cellar houses a vinotheque with over 500 wines from across Europe. It is a space for discovery, whether you are pairing a bottle with a meal or simply exploring the cellar’s depth. The LAMM is as much a destination for wine lovers as for hikers and nature seekers – a place where the pleasures of the table are taken seriously, without pretension.
