The story
Perched above the Baden-Baden Rebland, Ebanat is not a standalone restaurant but an integral part of Weingut Kopp, a Demeter-certified biodynamic winery that has been cultivating the diverse terroirs around Baden-Baden since 1996. Opened in September 2022, the restaurant brings a long-held vision to life: sophisticated gastronomy embedded in the landscape of a working estate. The architecture, the surrounding vineyards, and the kitchen work in concert, offering a dining experience that feels both grounded and expansive.
Under chef Stefan Schmidt, the kitchen follows a clear, product-oriented philosophy. The cooking is seasonal, precise, and focused, built on classical foundations with international influences. The team’s style emphasises regionality, craftsmanship, and structure — without unnecessary flourishes. A hand-cut tartare of Simmentaler beef, Norwegian salmon with potato cream and shellfish jus, or a vegetarian Pfifferlings risotto with zucchini and cherry tomatoes show the range of an evolving seasonal menu. The Michelin inspectors have recognised this approach, awarding the restaurant a Michelin Recommended distinction for 2026.
The wine list is a direct reflection of the Kopp estate’s work. Burgundy varieties and Riesling are vinified with precision and respect for the vintage, following biodynamic Demeter guidelines. The wines accompany the food and tell their own story of place — from the Lösslehm and Tonerde soils to the Feigenwäldchen and Balzenberg sites. The restaurant’s name, Ebanat, is a play on the local dialect for “am Berg” (on the hill), and the hilltop setting, with its terrace and orchard, allows guests to take in the very landscape that shapes each glass.
