The story
Le Jardin de France im Stahlbad has been a fixture of Baden-Baden’s fine-dining scene for 25 years. Sophie and Stéphan Bernhard welcome guests into a representative 19th-century building that sets the stage for cuisine that is both classic and seasonal. The restaurant’s Michelin star reflects their unwavering commitment to cooking that is at once precise and heartfelt—what the Bernhards call Cuisine du Coeur.
The dining experience here is shaped by its setting. A generous patio, surrounded by greenery and sheltered by an impressive roof structure, offers an ebenerdig (ground-level) refuge in the heart of the city. Upstairs, the rooms are elegant and intimate—designed to let the food and the guest remain the focus. Whether you choose the garden or the salon, the atmosphere is one of understated sophistication.
Stéphan Bernhard’s philosophy is simple: search for the best ingredients, prepare them with respect, and let them shine. The menus evolve with what the market and nature provide. Spring brings asparagus from Provence, morels, and delicate fish; autumn arrives with game and truffles. A recent five-course gourmet menu showcased these principles with dishes like lobster and langoustine ravioli, duck breast with fermented Kampot pepper, and a citrus tartlet with coconut-yogurt sorbet.
Classic French cuisine is the backbone here, but the Bernhards add their own sensibility. House-made foie gras with chutney and brioche, beef tartare with truffle and egg yolk, and scallop carpaccio with cauliflower and tahini sit alongside vegetarian menus that are given the same care. A selection of cheeses from Fromagerie Antony in Alsace and a profiterole with Madagascar chocolate sauce round out the experience—each dish a quiet argument for seasonality and technique.
