The story

Maltes hidden kitchen – Modern Cuisine, Michelin 1 Star in Baden-Baden

Casual Fine Dining in a Hidden Kitchen

Tucked inside a traditional Kaffeehaus on Gernsbacher Straße, Maltes hidden kitchen is a space where the formalities of fine dining give way to a more relaxed, accessible elegance. Owner Malte Kuhn has created what he calls “Casual Fine Dining” – a world apart from the coffeehouse that operates downstairs during the day, yet still grounded in the same passion for quality.

The restaurant’s vision is clear: to capture the taste of the region. The team reduces dishes to their essentials, letting the diverse aromas of carefully selected products take center stage. The craftsmanship is described as “clear and expressive,” and the result is a single, unified menu – a set sequence designed to let guests immerse themselves in the kitchen’s finest compositions. This focus on Modern Cuisine, rooted in local terroir, has earned Maltes hidden kitchen a Michelin star for high-quality cooking.

Atmosphere and Approach

The setting within the classic Kaffeehaus remains stylish and understated – a fitting backdrop for an evening that balances sophistication with genuine warmth. The team works with passion, and the open approach to Modern Cuisine means each plate is built on clarity rather than unnecessary complexity. With air conditioning and outdoor seating available, the restaurant adapts to the season while keeping the focus on what matters: the food and the experience.

A Place of Its Own

Maltes hidden kitchen is open Wednesday through Saturday from 7 p.m. It is, in every sense, a hidden kitchen – a discreet, refined destination within a beloved local institution. Here, the Michelin star is not a label but a natural consequence of a kitchen that values expression over excess, and regional flavor above all.

Concept In the evening, the "BB Café" transforms into a fine-dining restaurant. Behind a partition, the namesake "hidden kitchen" is then revealed. À la carte options are available alongside vegetarian and classic menus consisting of 3 to 6 courses. Culinary Style Malte Kuhn begins his sophisticated, consistently surprising menus with beautifully presented amuse-bouche miniatures, including a profiterole with apple and purple curry. The main course features Breton lobster with fennel and lobster bisque. The maitake mushroom shines in both menus with its robust, earthy-nutty aroma. The duck breast with rich blood sausage and duck "tea" is reserved for meat lovers. Wine During the day, Judith Kuhn runs the café; in the evening, she curates a wine journey (focusing on Baden, Palatinate, and Burgundy). She offers alcohol-free alternatives with her own creations based on tea, kombucha, or herbs. Atmosphere A living-room ambiance thanks to premium veneer, beautifully set tables, and attentive service. Conclusion Relaxed enjoyment among friendly hosts.
