The story
The name Schatzhauser comes from a forest spirit in Wilhelm Hauff’s Black Forest fairy tale “Das Kalte Herz” – a being who grants wishes. At this restaurant in Baiersbronn, the wish is for honest, beloved classics. Under chef Florian Stolte, the kitchen blends schwäbisch-badische traditions with dishes from around the world, all served in a relaxed setting overlooking the Tonbachtal. The Michelin Bib Gourmand award recognizes the combination of good quality and good value that defines this place.
The menu reads like a journey: homemade Maultaschen in beef broth, trout “Müllerin” with almond butter, a Wagyu Massaman Thai curry, and steaks grilled on lava stone – from a 300g ribeye to a porterhouse for two. Starters include a small truffle flammkuchen, spicy lobster-shrimp toast, or a classic beef tartare. Desserts range from chestnut mousse to a hot chocolate fondant. The wine list is curated to match, and the service team, led by Fabian Clement and Slavyana Ivanova, keeps the atmosphere easy and welcoming.
The Schatzhauser is designed for family and friends, with a terrace that makes the most of the valley view. It’s part of the Traube Tonbach estate, but stands on its own as a spot for straightforward, well-executed International cuisine. Whether you come for the steaks, the regional specialties, or the relaxed vibe, the spirit of the Schatzhauser delivers on its promise: good food, no fuss.
