In Berchtesgaden, at the foot of the Alps, Maximilian Kühbeck runs the Berchtesgadener Esszimmer with a clear philosophy: a kitchen rooted in the landscape, yet open to the world. The restaurant holds an organic certification (DE-ÖKO-037) and sources produce from local farms, turning the bounty of the Berchtesgadener Land into honest, refined country cooking.
Kühbeck describes his style as “weltoffene Regionalküche” – cosmopolitan regional cuisine. The foundation is the craft, the culinary heritage, and the ingredients of his homeland, but he also incorporates exceptional products from across Europe. The result is a menu that feels both grounded and surprising, where a simple root vegetable or a piece of mountain cheese can become the star.
Since February 2022, Kühbeck has been a “berufener Toques D’Or Chef” – an honor that cannot be applied for, only bestowed. As a Toques D’Or chef, he acts as an ambassador for good taste, regional agriculture, and the craft of cooking. The restaurant’s recognition by the Michelin Guide (Recommended 2026) further underscores the quiet precision of the kitchen. Kühbeck is equally invested in passing on his knowledge. On Wednesdays and Thursdays, the Esszimmer offers the “Menü Plaisir” – a five-course surprise menu served at the kitchen counter, available exclusively to students and apprentices. Priced at roughly one-third below the regular menu, it is designed to introduce young people to classic culinary techniques and exceptional local produce. Participants receive a certificate and, more importantly, a close-up look at how a professional kitchen works. It is a rare, generous gesture in a field that often guards its secrets.
