The story

Das Bootshaus Bingen am Rhein – Michelin-Recommended Contemporary Dining

Das Bootshaus in Bingen am Rhein

At Das Bootshaus, the setting is as memorable as the food. The vintage restaurant, with its rustic wooden floor, reclaimed-wood furniture, light linen fabrics, and leather chairs in a shabby-chic style, feels as if it has always been there. The grand view stretches over the floodplains of the Rhine all the way to the vineyards of the Rheingau.

Chef Nils Henkel leads the kitchen with a nature-connected approach, crafting an individual and contemporary style. His colorful, fresh creations follow the seasons and are a true feast for the senses. Henkel and his team focus on sustainable, innovative, and modern dishes with a strong emphasis on vegetables, creating a symbiosis of regional and cosmopolitan cuisine. The menu features maritime dishes, modern interpretations of bistro classics, and a variety of vegetable-forward plates from Henkel’s highly praised “Floraküche.”

This commitment to contemporary, vegetable-driven cooking has earned Das Bootshaus a Michelin recommendation, a recognition that underscores the kitchen’s dedication to quality and creativity.

For those seeking a more immersive experience, Chef Henkel also offers a Chef’s Table on select Saturdays. Guests sit directly in front of the kitchen pass, enjoying a seasonal six-course menu with wine or non-alcoholic pairings, personally served by Henkel and his team.

Concept Lunch and dinner are served in the minimalist restaurant. Alongside à la carte dishes, 3- to 4-course menus are also available in vegetarian options. Cuisine Style Under head chef Nils Henkel, the team has consistently delivered culinary success for years, specializing in modern dishes. Grounded in tradition yet elevated with creative, international accents: he pairs fjord trout with buttermilk, adds a spicy note with wasabi, and complements it with sesame and chickpeas. The spice-crusted breast served with a Togarashi-infused jus is a particular highlight, perfectly finished with saffron fennel, pistachios, and polenta. Wine Alongside five personal favorites introduced by team members on the menu, the selection offers a well-rounded overview of wines from across Germany. Atmosphere The ambiance, characterized by a maritime-inspired vintage aesthetic, is relaxed. The best tables are located by the windows, offering views of the Rhine and the Rüdesheim vineyards. Verdict A thoroughly satisfying dining experience at this lifestyle hotel.
