The story
For over a decade, Das Alte Haus has been a fixture on Alte Knochenhauerstraße in the heart of Braunschweig. Rooted in the city yet oriented toward the wider world, the restaurant defines its style as "cuisine international" – a Modern Cuisine that respects seasonality and lets nature dictate the ingredients.
The kitchen is led by chef Enrico Dunkel, whose philosophy is clear: "Die Natur und die Jahreszeiten bestimmen was ich kochen darf und ich entscheide wie es schmeckt" – nature and the seasons determine what he may cook, and he decides how it tastes. This approach translates into a single, evolving tasting menu that changes with the market. A recent seven-course sequence showcases this precision: tuna with red tosaka algae and shiso, scallop with pak choi and green chutney, smoked eel with beetroot and duck liver, followed by venison consommé with gyoza and beech mushrooms, and a Greater Omaha beef with carrot and tonka bean jus. The meal closes with Callebaut Ruby chocolate and red apple.
The wine pairing is equally considered, with each course matched to a German wine from small producers across Franconia, Baden, Rheinhessen, and the Mosel. The dining room is air-conditioned and offers outdoor seating in warmer months, while the wine list itself is notably interesting – a highlight for oenophiles.
