The story
This is the guiding principle at die kleine Linde in Braunschweig. Here, modern cuisine meets seasonal ingredients on plates that are as beautiful as they are thoughtful – technical precision without pretension. The Michelin guide has taken notice, recommending the restaurant for its clear, honest cooking and welcoming atmosphere.
The kitchen offers two distinct tasting journeys. The Eine Rundreise menu is a seven‑course tour that moves from salmon with cucumber and dill through pork cheek with lobster and carrot, scallop with water spinach and coconut, pumpkin with miso beurre blanc and sage, eel ramen, a Caesar‑style chicken, and finishes with rhubarb, hibiscus, and tonka bean. It is available in five or seven courses, with or without wine pairing.
Alongside it, the Botanischer Garten menu is a vegetarian dedication to the garden. Served only on advance reservation, it features celeriac with truffle and apple, pumpkin with miso beurre blanc and sage, spinach with corn and egg yolk, salsify with sesame and panko, a ramen course, leek with walnut and potato, and the same rhubarb dessert. Both menus reflect a kitchen that treats vegetables with the same attention as the finest seafood and meat.
Wine pairings are offered for both menus, selected to match the layered flavours of each course. The atmosphere stays relaxed – detail‑loved but never overthought. It is a place for a great evening, nothing more, nothing less.
