The story

Zucker Braunschweig: Contemporary Fine Dining in a Former Sugar Refinery | Michelin-Recommended

A Setting of Sweet History

In Braunschweig, a city known for its industrial heritage, Zucker has found a home that tells a story. The restaurant occupies the former premises of a sugar refinery, a space whose high ceilings and brickwork offer a distinct, unhurried atmosphere. Alexander Riehl and his team are the hosts here, welcoming guests into an environment that is both modern and anchored in the past.

The Philosophy of the Zwischenraum

Riehl describes his approach as a search for the Zwischenraum -- the space between the familiar and the experimental. The goal is not shock, but subtle revelation: a known ingredient is asked to show a new side, while something novel must carry a thread of the familiar. This philosophy drives the kitchen's contemporary cuisine, where each plate is a considered, often surprising, composition. Michelin inspectors noted the restaurant’s appeal lies in this very tension, praising the "tasty cuisine" and highlighting dishes like grilled duck breast with turnip as exemplary of the kitchen's skill.

À la Carte and Curated Tasting Menus

The menu offers both single courses and multi-course journeys. Among the appetizers, a goat's cheese tartlet with honey and walnut sits alongside a pigeon breast with pearl barley, beetroot, and Szechuan pepper. Main courses range from local comfort -- a classic Grünkohl with Kassler and Braunschweiger sausage -- to more ambitious plates like crispy zander with lentil vegetables and braised oxtail with potato purée. The multi-course "Zucker Menü" is a curated experience, featuring dishes such as Skrei cod with cauliflower and green curry, followed by rosy duck breast with Jerusalem artichoke and a hazelnut cake with apple and caramel. A separate, shorter menu is offered for lunch, making the restaurant's refined style accessible throughout the day.
