The story
Zum Adler’s story begins long before its current incarnation. The original tavern operated on the same spot in Bünde for over a century. In 2013, the Hartmann family decided to tear down the old building and replace it with a striking five-story corner structure, bathed in natural light. When the new Zum Adler opened its doors on March 1, 2016, it brought a fresh concept to a historic address.
The kitchen team takes ingredient provenance seriously. Meat and poultry come from animals raised on pasture, allowed to roam freely. Fish and seafood are wild-caught. Vegetables, eggs, cheese, ham, and sausage are sourced from producers who follow biodynamic practices. This commitment to quality defines the contemporary cuisine served here.
With 50 indoor seats and 32 on the outdoor terrace, Zum Adler offers a relaxed setting for lunch, dinner, or Sunday brunch (available by request for groups of ten or more).
