The story
Set within a nature reserve overlooking the Froschgrundsee lake, the restaurant occupies a property with a long tradition of hospitality. Hannes and Loreen Scammell, chef and host, continue that legacy with a clear philosophy: the product comes first. They prioritize fresh, regional, and seasonal ingredients, using only the best raw materials and preparing them with respect and creativity. They are committed to responsible use of resources and environmentally conscious operations. This dedication to quality and value has earned the restaurant a Michelin Bib Gourmand.
Hannes Scammell trained in top kitchens around the world, including the three-Michelin-starred Restaurant Daniel in New York, as well as acclaimed restaurants in South Africa, Sweden, and Spain. He became a certified kitchen master in 2016. His cooking blends modern techniques with the flavors of Franconia. Loreen Scammell grew up in her family’s hotel and restaurant and began her training at the same time as Hannes. Her career took her to the Söl’ring Hof on Sylt, Café Boulud in New York, and other notable establishments. Together, they bring a wealth of international experience to their home in Rödental, creating a warm and professional atmosphere.
The kitchen offers a healthy mix of modern cuisine and Franconian tradition. On Sundays and holidays, expect classic Franconian roasts with homemade dumplings. Throughout the week, there are also homemade cakes, ice cream, and fine coffee and tea selections. On selected dates, the team prepares specialties from their smoker grill. The menu changes with the seasons, always emphasizing fresh, local ingredients. Outdoor seating provides views of the lake and surrounding meadows, making it an ideal spot for a leisurely meal.
