His cooking rests on a French foundation, enriched by an Italian soul and accented with subtle Asian influences. The result is modern cuisine that is both structured and expressive.
La Rocca’s approach centers on outstanding ingredients and classical techniques, yet every dish is developed toward a lighter, more elegant expression. A single dominant product guides each course, supported by a few precisely chosen components. The menu builds in intensity—from pure clarity to deeper flavor—without losing its sense of ease. His philosophy is grounded in craftsmanship: “Every day, get 1% better.”
The restaurant’s Michelin star, awarded for high-quality cooking, reflects this commitment. The gourmet menu showcases this style through dishes like Saint-Pierre with nduja, fennel, and finger limes, or beef Wellington as a main. A special course pairs pigeon cotoletta with miso, Parmesan, and lemon, optionally accompanied by Umai Modern or N25 Baerii caviar. For dessert, Guanaja chocolate meets mandarin, marzipan, and oxalis.
A separate à la carte menu offers the same kitchen’s precision in individual orders. Starters include a topinambur foam soup with truffle and egg yolk, or tataki of tuna with passion fruit and avocado. Main courses range from braised veal cheek with potato and caramel to Skrei cod with honey and bergamot.
The wine pairing, drawn largely from Burgenland, is designed to complement the menu’s arc. The dining room is welcoming, with air conditioning and wheelchair access. edl.eins is open Wednesday through Saturday from 18:30.
