He has guided this historic property for fifteen years, choosing to remain in Lippe rather than pursue opportunities elsewhere. The kitchen transforms local harvests into structured plates that balance familiar formats with precise technique. Guests often order the truffle pasta finished with baked capers and feta, or the pan fried salmon resting on mushroom risotto with lemon butter. Thursday brings the loaded schnitzel series, where Tirol cheese or Mexican jalapeños replace standard toppings. The building itself dates back more than a century as a customs station along the B66 highway.
