Zur Schwarzdrossel in Schermbeck traces its roots to the summer of 1960 when Wilhelmine and Ernst Krebber opened the gasthaus. Daughter Wilma and Hans Stuhldreier stepped in during 1985 to guide the business through evolving times. Today, Sandra Zens leads the kitchen and front of house as the third-generation owner, having earned her master certification in May 2000 before taking full charge in 2011. This continuity ensures the German kitchen maintains a steady hand while embracing modern expectations.
The menu highlights a strong commitment to regional sourcing and self-cultivation. A partnership with Trüffelwerk brings house-grown varieties such as Austernseitlinge, Rosenseitlinge, Shiitake, and Nameko to the plate, reflecting a small-but-fine approach to ingredients.
